Zaatar Rolls

The cinnamon rolls dough, but with a savory filling! I sometimes like preparing a half-n-half with both fillings, the best of both worlds.


Ingredients

  • Dough:

    2 1/2 cups flour

    1 cup warm milk

    2 tsp dry yeast

    4 tbsp sugar

    1/2 tsp salt

    1 egg

    60 g butter

  • Filing:

    4 tbsp zaatar

    4 tbsp pomegranate molasses

    walnuts

    150 g butter, cubed

  • Toppings:

    200 g yogurt

    1 tbsp pomagrante molasses

    pomegranate seeds

    walnuts


Method

  • In a bowl, mix the yeast, sugar and milk. Cover and set a side for 10 mins in a warm place till bubbles appear.

  • In a mixing bowl, fitted with a hook attachment, place the flour, salt, melted butter, egg and milk mixture.

  • Mix for 5-6 mins on medium speed till the dough is smooth.

  • Place it in a greased bowl, cover and proof for an hour.

  • Preheat the oven at 180°C.

  • Sprinkle flour on a clean surface. Roll the dough into a rectangle and spread the zaatar, pomegranate molasses, walnuts, and scatter the butter.

  • Roll the dough like a log. Cut into slices and place it in a buttered baking dish.

  • Bake for 30 to 35 mins.

  • Allow the rolls to cool for 5 mins, then add all the toppings.
