Sütlaç - Turkish Rice Pudding

Back when I visited Turkey, I used to have this everyday for dessert. It’s a rice pudding that’s so delicious and creamy.

Ingredients

  • ½ cup Egyptian rice

  • 1 cup water

  • 1 liter + 1 cup milk

  • ½ cup sugar

  • 1½ tbsp cornstarch

  • vanilla

  • pinch of cinnamon

  • ground roasted hazelnuts


Method

  • Wash the rice throughly.

  • Boil the rice and water on medium heat until the rice is half cooked and the water evaporated.

  • Add the milk (only 1 liter) in two batches mixing after each addition and allowing it to cook.

  • Mix the cornstarch with 2 tbsp of milk and add it to the pot with the sugar, vanilla, and cinnamon.

  • The mixture should thicken but still be runny if not add another cup of milk.

  • Pour the mixture in ramekins, place it in a bain-marie, and broil the top until brown.

  • Allow to cool at room temperature then refrigerate.

  • Serve cold with ground roasted hazelnuts.
