Um Ahmed

The best version of Um Ali. Recipe by my mother, Um Ahmed.


Ingredients

  • 160 g mini butter crossaints

  • 425 g palmiers

  • 125 g puff pastry sticks

  • 5 cups milk

  • 2 cans (160 ml each) evaporated milk

  • 1/2 cup condensed milk

  • 1/2 tsp cardamom

  • 1 tsp cinnamon

  • vanilla

  • 1 cup mixed chopped nuts

Topping

  • 1/2 cup condensed milk

  • 1/2 cup whipping cream

  • 300 g cream

  • 50 g butter, melted

  • vanilla


Method 

  • Break up the croissants, palmiers, and puff pastry sticks into a baking dish. Set aside some (around 200 g) to top off later.

  • Sprinkle 1/2 cup of the nuts on the biscuits.

  • In a saucepan, add the milk, condensed milk, and evaporated milk. Allow to boil. 

  • Add the cardamom, cinnamon, and vanilla.

  • Pour the mixture over the biscuits and nuts.

  • Add the biscuits that were set aside and the remaining 1/2 cup of nuts on top.

  • Combine all the topping ingredients. Pour the mixture on top.

  • Bake for 15-20 minutes.
