Lamingtons
Sponge cake dipped in chocolate coating and covered with coconut.
Ingredients
Sponge Cake
160 g sugar
3 eggs
160 g flour
3/4 tsp baking powder
80 g melted butter
Chocolate Sauce
25 g melted butter
80 g milk
25 g cocoa powder
125 g icing sugar
Desiccated Coconut (100 g)
Method
Preheat the oven to 180°C/350°F.
Whisk the sugar and eggs until fluffy.
Sift in the flour and baking powder. Fold gently.
Fold in the melted butter.
Pour into a 9" inch square pan and bake for 20-25 minutes.
Allow to cool completely then cut into squares.
Combine all the chocolate sauce ingredients.
Dip the cake in the sauce.
Coat with dessicated coconut.
