Lamingtons

Sponge cake dipped in chocolate coating and covered with coconut.


Ingredients

Sponge Cake

  • 160 g sugar

  • 3 eggs

  • 160 g flour

  • 3/4 tsp baking powder

  • 80 g melted butter

Chocolate Sauce

  • 25 g melted butter

  • 80 g milk

  • 25 g cocoa powder

  • 125 g icing sugar

Desiccated Coconut (100 g)


Method

  • Preheat the oven to 180°C/350°F.

  • Whisk the sugar and eggs until fluffy.

  • Sift in the flour and baking powder. Fold gently.

  • Fold in the melted butter.

  • Pour into a 9" inch square pan and bake for 20-25 minutes.

  • Allow to cool completely then cut into squares.

  • Combine all the chocolate sauce ingredients.

  • Dip the cake in the sauce.

  • Coat with dessicated coconut.
