Roasted Strawberry Cheesecake
A twist on the classic cheesecake that adds a depth of flavor and sweetness to the strawberries through the roasting process.
Ingredients
- 400 g strawberries 
- 1/4 cup sugar 
Crust
- 300 g ground biscuits 
- 90 g butter, melted 
- 2 tbsp sugar 
Cream Cheese Mixture
- 750 g cream cheese 
- 1/4 cup sugar 
- 2 eggs 
- 1/2 cup whipping cream 
- vanilla 
Method
- Preheat oven to 170°C/325°F. 
- Spread the strawberries on a baking sheet lined with parchment paper. 
- Add the sugar and toss. 
- Roast them in the oven for about 20-25 minutes, or until they're soft and juicy. 
- Mash or blend them, then set aside to cool. 
- In a bowl, combine the biscuits, butter, and sugar. 
- Press into a 9-inch pan lined with baking paper. Refrigerate. 
- In a food processor or by hand, whisk the cream cheese and sugar. 
- Add the eggs and vanilla, followed by the whipping cream. 
- Remove around 1 cup of the mixture and spread onto the chilled crust. 
- Add the roasted strawberries to the remaining mixture. 
- Pour slowly over the plain cream cheese mixture. 
- Bake in a ban-marie for 50-60 minutes. 
- Refrigerate for 4 hours or overnight. 
- Freeze for 1 hour before slicing and serving.
