Blackberry Scones
The scones are a delightful fusion of tangy blackberries and sweet white chocolate, creating a perfect treat for breakfast or an afternoon snack. They are ideal for serving with a cup of tea or coffee, offering a sophisticated twist on a classic baked good.
Ingredients
350g self-raising flour
pinch of salt
50g sugar
75g butter, cold
1 egg
100ml buttermilk
100 g white chocolate, chopped
80 g blackberries, mashed
Note: buttermilk substitute:
90 ml milk
10 ml vinegar
Method
Preheat the oven to 220°C/425°F. Line a baking sheet with baking paper.
If using the buttermilk substitute, combine the vinegar and milk and let sit for 5 minutes.
Using a food processor or by hand, combine the dry ingredients and butter.
Beat the egg with the buttermilk, then slowly add it to the mixture (set aside around 1 tbsp of the mixture).
Chop 50 g of the white chocolate and fold it in with the mashed blackberries.
Lightly flour your fingers and the worktop and turn the dough out onto it. Roll the dough out to about 3cm thick.
Dip a 5 cm cutter in some flour and stamp out rounds.
Brush them with the buttermilk mixture set aside.
Bake for about 12-15 minutes.
Swirl 50 g of melted chocolate on top of the scones.
