Malva Pudding

Malva pudding is a traditional South African dessert known for its spongy, caramelized texture and rich, buttery flavor. This delightful treat is made from apricot jam and is soaked in a creamy vanilla sauce.


Ingredients

Pudding

  • 50 g butter

  • 1 1/4 cup brown sugar

  • 1/4 cup apricot jam

  • 2 eggs

  • vanilla

  • 1 1/2 cup milk

  • 2 tbsp vinegar

  • 1 1/2 cup flour

  • 1 tsp baking soda

Sauce

  • 50g butter

  • 1 1/2 cup whipping cream

  • 1/4 cup brown sugar

  • vanilla


Method

  • Preheat the oven to 180°C/350°F. Butter a 10*8” baking dish.

  • Beat the butter, brown sugar, apricot jam, vanilla, and eggs until light and fluffy.

  • Fold in the flour and baking soda.

  • Add in the milk and vinegar.

  • Pour the batter into the baking dish.

  • Bake for 40-45 minutes or until the skewer inserted comes out with some crumbs (it won’t be clean).

  • In a saucepan, boil the butter, brown sugar, whipping cream, and vanilla. Strain.

  • Poke the pudding once it comes out of the oven and pour around half of the sauce on top.

  • Serve with the remaining sauce and ice cream.
