Malva Pudding
Malva pudding is a traditional South African dessert known for its spongy, caramelized texture and rich, buttery flavor. This delightful treat is made from apricot jam and is soaked in a creamy vanilla sauce.
Ingredients

50 g butter
1 1/4 cup brown sugar
1/4 cup apricot jam
2 eggs
vanilla
1 1/2 cup milk
2 tbsp vinegar
1 1/2 cup flour
1 tsp baking soda
Sauce
50g butter
1 1/2 cup whipping cream
1/4 cup brown sugar
vanilla
Method
Preheat the oven to 180°C/350°F. Butter a 10*8” baking dish.
Beat the butter, brown sugar, apricot jam, vanilla, and eggs until light and fluffy.
Fold in the flour and baking soda.
Add in the milk and vinegar.
Pour the batter into the baking dish.
Bake for 40-45 minutes or until the skewer inserted comes out with some crumbs (it won’t be clean).
In a saucepan, boil the butter, brown sugar, whipping cream, and vanilla. Strain.
Poke the pudding once it comes out of the oven and pour around half of the sauce on top.
Serve with the remaining sauce and ice cream.
