Qatayef

A crispy exterior filled with a mouth-watering filling. The nut filling could be replaced with cream as well.

Ingredients

  • Batter:

    1 cup flour

    1/2 tbsp yeast

    1/4 cup semolina

    1 tbsp sugar

    1/2 tsp baking powder

    1/2 tsp baking soda

    1 1/2 cup warm water

  • Filling:

    1/4 cup chopped pistachios 

    1/4 cup chopped pecans 

    1/4 cup chopped walnuts 

    1/4 cup shredded coconut 

    1/2 tsp cinnamon 

    1 tbsp sugar 


Method

  • Combine all of the dough's ingredients and set aside to proof for an hour.

  • Meanwhile, prepare the filling by combining all of the ingredients.

  • Over medium heat on a nonstick pan, pour spoonfuls of the dough until bubbles have formed.

  • Remove the qatayef and cover with a towel and allow to cool.

  • Stuff the qatayef with the filling and pinch the sides close.

  • Freeze for 1 hour.

  • Fry until golden brown and crispy.

  • Serve with sugar syrup and pistachios.
