Qatayef
A crispy exterior filled with a mouth-watering filling. The nut filling could be replaced with cream as well.
Ingredients
Batter:
1 cup flour
1/2 tbsp yeast
1/4 cup semolina
1 tbsp sugar
1/2 tsp baking powder
1/2 tsp baking soda
1 1/2 cup warm water
Filling:
1/4 cup chopped pistachios
1/4 cup chopped pecans
1/4 cup chopped walnuts
1/4 cup shredded coconut
1/2 tsp cinnamon
1 tbsp sugar
Method
Combine all of the dough's ingredients and set aside to proof for an hour.
Meanwhile, prepare the filling by combining all of the ingredients.
Over medium heat on a nonstick pan, pour spoonfuls of the dough until bubbles have formed.
Remove the qatayef and cover with a towel and allow to cool.
Stuff the qatayef with the filling and pinch the sides close.
Freeze for 1 hour.
Fry until golden brown and crispy.
Serve with sugar syrup and pistachios.
