Pistachio Tart

Brown butter biscuit crust, pistachio white chocolate filling, and mascarpone topping.


Ingredients

Crust

  • 300 g digestives

  • 90 g butter, browned

Filling

  • 100 g pistachios

  • 100g white chocolate, melted

  • 1/2 cup milk

Topping

  • 1/2 cup whipping cream

  • 2 tbsp sugar

  • 125g mascarpone

  • vanilla


Method

  • In a food processor, add the digestives.

  • In a saucepan, add the butter and allow the milk solids to brown. Add into the food processor.

  • Press into a 9” tart pan.

  • In a pan, toast the pistachios. Add into a food processor and blend.

  • Add the white chocolate and milk.

  • Pour the filling on the crust and chill for 30 minutes.

  • Whisk the whipping cream, vanilla, and sugar. Add the mascarpone.

  • Pipe the topping on the chilled tart. Top with sliced pistachios.
