Pistachio Tart
Brown butter biscuit crust, pistachio white chocolate filling, and mascarpone topping.
Ingredients
Crust
300 g digestives
90 g butter, browned
Filling
100 g pistachios
100g white chocolate, melted
1/2 cup milk
Topping
1/2 cup whipping cream
2 tbsp sugar
125g mascarpone
vanilla
Method
In a food processor, add the digestives.
In a saucepan, add the butter and allow the milk solids to brown. Add into the food processor.
Press into a 9” tart pan.
In a pan, toast the pistachios. Add into a food processor and blend.
Add the white chocolate and milk.
Pour the filling on the crust and chill for 30 minutes.
Whisk the whipping cream, vanilla, and sugar. Add the mascarpone.
Pipe the topping on the chilled tart. Top with sliced pistachios.
