Apple and Custard Cake
Ingredients
Custard
2 egg yolks
2 tbsp sugar
2 tbsp cornstarch
1 cup milk
vanilla
15 g butter
Cake
200 g butter
3/4 cup sugar
2 eggs
vanilla
1 1/4 cup flour
1 1/2 tsp baking powder
2 apples, peeled and thinly sliced
1 tbsp sugar
1/4 tsp cinnamon
Method
Custard
In a saucepan over low heat, add the milk.
In a bowl, whisk the egg yolks, sugar, vanilla, and cornstarch.
Add some of the hot milk to the egg mixture and whisk.
Return the mixture back to the pan and boil until thickened. Add the butter.
Lay a sheet of plastic wrap directly over the cream. Refrigerate it.
Cake
Preheat the oven to 350F/180C. Line a 9” springform pan with baking paper.
Beat the sugar and butter until fluffy.
Add the eggs and vanilla.
Add the flour and baking powder.
Add half of the cake mixture to the pan followed by the custard.
Slowly dollop the rest of the cake mixture and spread it to cover the custard.
Place the apples on top and sprinkle with sugar and cinnamon.
Bake for 1 hour and allow to cool completely before serving.
