Nutella Cookies
Ingredients
120g Nutella
100g browned butter
120g brown sugar
40g sugar
1 egg
vanilla
160g all-purpose flour
40g milk powder
1/2 tsp instant coffee
¼ tsp salt
¼ tsp baking powder
¼ tsp baking soda
100g dark chocolate, chopped
Method
Place the Nutella in a pipping bag and pipe circles on a baking sheet lined with baking paper. Freeze until firm.
Boil the butter until the fat has caramelized.
In a bowl, whisk the butter, both sugars, egg and vanilla until slightly lighter in color.
Add the flour, baking soda, baking powder, milk powder, instant coffee, and salt.
Quickly fold in the chopped chocolate and Nutella circles. The Nutella tends to melt quickly.
Use an icecream scoop to create cookie dough balls, and freeze the dough for at 30 minutes and up to a month.
Preheat the oven at 180°C and line a baking pan with baking paper.
Place the cookies on the pan spacing them out.
Bake for 13-15 min and allow to cool before serving.
