Blueberry Muffins


Ingredients

  • 50g butter

  • 1/3 cup sugar

  • 1 egg

  • vanilla

  • 3/4 cup flour

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp cinnamon

  • 1/4 cup yogurt

  • 1 tbsp milk

  • 100 g blueberries

  • 1/2 tbsp flour

  • 2 tbsp brown sugar, topping


Method

  • Preheat the oven at 180°C and line a muffin pan with 6 muffin liners.

  • In a bowl, whisk the butter and sugar until light. Add the egg and vanilla.

  • Add the flour, baking soda, baking powder, cinnamon, yogurt, and milk.

  • Toss the blueberries with the flour. Fold into the muffin mixture.

  • Using an ice cream scoop, scoop the dough into the liners.

  • Top with brown sugar.

  • Bake for 20 min and allow to cool before serving.
