Blueberry Muffins
Ingredients
50g butter
1/3 cup sugar
1 egg
vanilla
3/4 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 cup yogurt
1 tbsp milk
100 g blueberries
1/2 tbsp flour
2 tbsp brown sugar, topping
Method
Preheat the oven at 180°C and line a muffin pan with 6 muffin liners.
In a bowl, whisk the butter and sugar until light. Add the egg and vanilla.
Add the flour, baking soda, baking powder, cinnamon, yogurt, and milk.
Toss the blueberries with the flour. Fold into the muffin mixture.
Using an ice cream scoop, scoop the dough into the liners.
Top with brown sugar.
Bake for 20 min and allow to cool before serving.
