Pear Tartlets
Ingredients
1 1/2 tbsp water
100 g sugar
75 g cream
20 g butter
1/2 tsp salt
6 square sheets of puff pastry
3 pears
1/4 cup chopped walnuts
Method
Preheat the oven to 180°C/350°F.
In a saucepan over low heat, place the sugar and water and allow the sugar to dissolve. Don’t stir.
Turn the heat up to medium and allow the sugar to turn into a dark amber color. Making sure to swirl the pan instead of stirring.
Slowly add the cream, stir, and allow to boil for 1 minute.
Add the butter, stir, and boil for another minute.
Turn off the heat and add the salt.
Peel the pears, cut them in half, and core them. Slice the pears from the stem down keeping it intact.
On a baking sheet lined with baking paper, place the puff pastry sheet followed by a tablespoon of the caramel.
Place one half of a pear on each sheet of puff pastry. Optionally, you can cut the excess puff pastry around the pear.
Spread some more caramel on top.
Bake for 20-25 minutes.
Top with caramel and chopped nuts.
