Picnic Cake


Ingredients

  • 1 1/3 cup flour

  • 3/4 cup sugar

  • 1/2 tsp baking powder

  • 1/4 teaspoon baking soda

  • pinch of salt

  • 60 g butter

  • 1/2 cup milk

  • 2 tbsp oil

  • vanilla

  • 2 eggs

  • 1/2 cup chocolate chips

  • 150 g marshmallows


Method

  • Preheat oven to 180°C/350°F. Grease a 9” square pan with butter.

  • In a bowl of a stand mixer fitted with a whisk attachment, add the flour, sugar, baking powder, baking soda, salt, and butter.

  • Mix until the butter is incorporated.

  • In another bowl, add the milk, oil, eggs, and vanilla.

  • Stream the liquid mixture into the cake batter while the mixer runs.

  • Pour the batter into the pan and add the chocolate chips on top.

  • Bake for 25 minutes.

  • Add the marshmallows and bake for another 10 minutes.
