Picnic Cake
Ingredients
1 1/3 cup flour
3/4 cup sugar
1/2 tsp baking powder
1/4 teaspoon baking soda
pinch of salt
60 g butter
1/2 cup milk
2 tbsp oil
vanilla
2 eggs
1/2 cup chocolate chips
150 g marshmallows
Method
Preheat oven to 180°C/350°F. Grease a 9” square pan with butter.
In a bowl of a stand mixer fitted with a whisk attachment, add the flour, sugar, baking powder, baking soda, salt, and butter.
Mix until the butter is incorporated.
In another bowl, add the milk, oil, eggs, and vanilla.
Stream the liquid mixture into the cake batter while the mixer runs.
Pour the batter into the pan and add the chocolate chips on top.
Bake for 25 minutes.
Add the marshmallows and bake for another 10 minutes.
