Apple Crumble With Custard


Ingredients

Crumble

  • 75 g butter

  • 1/4 cup sugar

  • 3/4 cup flour

  • 1/4 cup oats

  • pinch of salt

Apple Filling

  • 4 apples, peeled and cubed

  • 30 g butter

  • 1/4 cup brown sugar

  • 1 tsp cinnamon

  • pinch of salt

  • vanilla

Custard

  • 2 cups milk

  • 2 tbsp cornstarch

  • 1/3 cup sugar

  • 4 egg yolks

  • vanilla

  • 30 g butter


Method

Crumble

  • Preheat the oven to 180°C/350°F.

  • In a bowl, combine the butter and sugar.

  • Add in the flour until combined. Fold in the oats.

  • Spread the crumble on a baking sheet lined with baking paper.

  • Bake for 15-20 minutes.

Apple Filling

  • In a pan, add the butter, brown sugar, cinnamon, vanilla, salt and apples.

  • Cook for around 10 minutes or until the apples soften and juices evaporate.

Custard

  • In a bowl, combine the sugar, cornstarch, vanilla and yolks.

  • In a saucepan, heat the milk.

  • Add some of the hot milk to the egg mixture and whisk.

  • Return the mixture back to the pan and boil until thickened.

  • Add the butter and whisk. Strain the custard.

Assembly

  • In a serving bowl, add the apple filling, crumble, and hot custard.
