Apple Crumble With Custard
Ingredients
Crumble
75 g butter
1/4 cup sugar
3/4 cup flour
1/4 cup oats
pinch of salt
Apple Filling
4 apples, peeled and cubed
30 g butter
1/4 cup brown sugar
1 tsp cinnamon
pinch of salt
vanilla
Custard
2 cups milk
2 tbsp cornstarch
1/3 cup sugar
4 egg yolks
vanilla
30 g butter
Method
Crumble
Preheat the oven to 180°C/350°F.
In a bowl, combine the butter and sugar.
Add in the flour until combined. Fold in the oats.
Spread the crumble on a baking sheet lined with baking paper.
Bake for 15-20 minutes.
Apple Filling
In a pan, add the butter, brown sugar, cinnamon, vanilla, salt and apples.
Cook for around 10 minutes or until the apples soften and juices evaporate.
Custard
In a bowl, combine the sugar, cornstarch, vanilla and yolks.
In a saucepan, heat the milk.
Add some of the hot milk to the egg mixture and whisk.
Return the mixture back to the pan and boil until thickened.
Add the butter and whisk. Strain the custard.
Assembly
In a serving bowl, add the apple filling, crumble, and hot custard.
