Peach Tarte Tatin

One of my mom’s favorite desserts, the gooey peaches are perfection!

Ingredients

  • 30g sugar

    4-5 peaches

    vanilla

  • Dough

    125 g flour

    10 g sugar

    pinch of salt

    125g butter, cubed

    65g cold water

  • Caramel

    50g butter

    70g sugar


Method

  • Half and stone the peaches.

  • Toss in a bowl with the sugar and vanilla. Refrigerate.

Dough

  • In a bowl, combine the flour, sugar, and salt.

  • Add the butter and lightly flatten.

  • Add the water and loosely combine. Refrigerate for 30 min.

  • Roll the dough and fold into a letter. Repeat twice.

  • Refrigerate for 1 hour.

Caramel

  • In a saucepan, add the sugar and allow caramelize.

  • Add the butter, then the peaches and cook for 3 min on each side. Remove from the heat.

Assembly

  • Roll out the dough. Place it on the peaches, tuck in the edges, and pierce with a knife.

  • Bake in a preheated oven at 180°C for 40 min.

  • Flip and serve with clotted cream or icecream.
