Peach Tarte Tatin
One of my mom’s favorite desserts, the gooey peaches are perfection!
Ingredients
30g sugar
4-5 peaches
vanilla
Dough
125 g flour
10 g sugar
pinch of salt
125g butter, cubed
65g cold water
Caramel
50g butter
70g sugar
Method
Half and stone the peaches.
Toss in a bowl with the sugar and vanilla. Refrigerate.
Dough
In a bowl, combine the flour, sugar, and salt.
Add the butter and lightly flatten.
Add the water and loosely combine. Refrigerate for 30 min.
Roll the dough and fold into a letter. Repeat twice.
Refrigerate for 1 hour.
Caramel
In a saucepan, add the sugar and allow caramelize.
Add the butter, then the peaches and cook for 3 min on each side. Remove from the heat.
Assembly
Roll out the dough. Place it on the peaches, tuck in the edges, and pierce with a knife.
Bake in a preheated oven at 180°C for 40 min.
Flip and serve with clotted cream or icecream.
