Honey Cake
Ingredients
Cake
50 g sugar
100 g honey
150 g butter
1 tsp baking soda
2 eggs
vanilla
250 g flour
pinch of salt
Cream
300 g whipping cream
200 g caramelized sweetened condensed milk
Method
Preheat the oven to 180°C/350°F. Line a sheet pan with baking paper.
In a saucepan, add the honey, sugar, and butter.
Once the butter melts, add the baking soda and mix for 2 minutes. Set aside to cool down.
Pour the mixture into a bowl and whisk in the eggs and vanilla.
Add the flour and salt.
Pour the batter into the sheet pan. Spread it thinly.
Bake for 8-10 minutes.
Cut the cake into 8 sections. Set aside any crumbs and excess pieces.
Whisk the whipping cream. Add the caramel.
Spread the cream on each layer and cover the sides.
Crumble up the excess pieces and dust the cake.
Refrigerate for 4 hours or overnight.
