Brookies
Ingredients
Cookie Layer
100g browned butter
1/2 cup brown sugar
1/4 cup sugar
1 egg
vanilla
1 1/3 cup flour
¼ tsp baking powder
¼ tsp baking soda
100g dark chocolate, chopped
Brownie Layer
175g semi sweet chocolate chips, melted
100g butter
½ cup brown sugar
1 cup white sugar
3 eggs
¼ cup cocoa powder
½ cup flour
Method
Preheat the oven to 180°C/350°F. Line a 9” square pan with baking paper.
Cookie Layer
Boil the butter until the fat has caramelized.
In a bowl, whisk the butter, white and brown sugar, egg, and vanilla until slightly lighter in color.
Add the flour, baking soda, and baking powder.
Fold in the chopped chocolate.
Brownie Layer
In a bowl, melt the butter and chocolate.
Whisk in the white and brown sugar.
Add the eggs.
Fold in the flour and cocoa powder.
Add half of the brownie mixture in the pan followed by half of the cookie mixture. Repeat with the other half of the brownie and cookie mixture.
Bake for 35-40 minutes.
