Brookies


Ingredients

Cookie Layer

  • 100g browned butter

  • 1/2 cup brown sugar

  • 1/4 cup sugar

  • 1 egg

  • vanilla

  • 1 1/3 cup flour

  • ¼ tsp baking powder

  • ¼ tsp baking soda

  • 100g dark chocolate, chopped

Brownie Layer

  • 175g semi sweet chocolate chips, melted

  • 100g butter

  • ½ cup brown sugar

  • 1 cup white sugar

  • 3 eggs

  • ¼ cup cocoa powder

  • ½ cup flour


Method

  • Preheat the oven to 180°C/350°F. Line a 9” square pan with baking paper.

Cookie Layer

  • Boil the butter until the fat has caramelized.

  • In a bowl, whisk the butter, white and brown sugar, egg, and vanilla until slightly lighter in color.

  • Add the flour, baking soda, and baking powder.

  • Fold in the chopped chocolate.

Brownie Layer

  • In a bowl, melt the butter and chocolate.

  • Whisk in the white and brown sugar.

  • Add the eggs.

  • Fold in the flour and cocoa powder.

  • Add half of the brownie mixture in the pan followed by half of the cookie mixture. Repeat with the other half of the brownie and cookie mixture.

  • Bake for 35-40 minutes.
