Custard Rice Pudding


Ingredients

  • 1/2 cup Egyptian/Arborio rice

  • 3 1/2 cups milk

  • vanilla

  • 2 egg yolks

  • 1/2 cup cream

  • 1/3 cup sugar

  • cinnamon, for serving


Method

  • Thoroughly rinse the rice.

  • In a saucepan, add the rice, milk, and vanilla. Allow to boil.

  • Cook on low for 15-20 minutes.

  • In a bowl, mix the egg yolks, sugar, and cream. Strain the mixture.

  • Stream into the saucepan while mixing.

  • Cook on low for 5 minutes.

  • Serve warm with a sprinkle of cinnamon.
