Almond Filled Cookies


Ingredients

Makes 16 large cookies

Almond Filling

  • 30 g butter

  • 1/4 cup sugar

  • 1 egg

  • vanilla

  • 1 cup almond flour

Cookie Dough

  • 200 g butter, melted

  • 1 cup sugar

  • 1/2 cup powdered sugar

  • 2 eggs

  • vanilla

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 3 cups flour

  • 1/2 cup sliced almonds


Method

Almond filling

  • In a bowl, mix the butter and sugar. Add the egg and vanilla.

  • Fold in the almond flour. Refrigerate.

Cookie dough

  • In a bowl, combine the melted butter, sugar, and powdered sugar.

  • Add in the eggs and vanilla.

  • Fold in the baking soda, salt, and flour. Refrigerate for 30 minutes.

Assembly

  • Preheat the oven to 180°C/350°F.

  • Using an ice cream scoop, scoop the cookie dough. Using a tablespoon indent the dough. Add some of the almond filling and cover it with more of the cookie dough. Scoop onto a baking sheet lined with baking paper.

  • Press the sliced almonds on top of the cookies.

  • Bake for 15 minutes or until golden.

  • Dust with powdered sugar.
