Healthy Granola

A healthier version, for a guilt-free breakfast.


Ingredients

  • 1/4 cup coconut oil

  • 1/2 cup honey

  • 1 tsp vanilla

  • 2 1/2 cups oats

  • 1/2 cup shredded coconut

  • 1/4 cup pecans, chopped

  • 1/4 cup almonds, chopped

  • 1/4 cup walnuts, chopped

  • 1 tsp cinnamon

  • pinch of salt


Method

  • Preheat the oven to 150°C/300°F. Lightly grease a baking pan.

  • Melt the honey and coconut oil in the microwave or in a saucepan over low heat.

  • Stir in the vanilla, cinnamon, and salt.

  • Mix in the oats, coconut, almonds, pecans, and walnuts.

  • Spread evenly on the baking sheet.

  • Bake for 20-30 minutes, stirring halfway through.

  • Allow to cool completely and store in an airtight container at room temperature.

  • Serve with milk or greek yogurt, any fruit of your choice, and a drizzle of honey.
