Healthy Granola
A healthier version, for a guilt-free breakfast.
Ingredients
1/4 cup coconut oil
1/2 cup honey
1 tsp vanilla
2 1/2 cups oats
1/2 cup shredded coconut
1/4 cup pecans, chopped
1/4 cup almonds, chopped
1/4 cup walnuts, chopped
1 tsp cinnamon
pinch of salt
Method
Preheat the oven to 150°C/300°F. Lightly grease a baking pan.
Melt the honey and coconut oil in the microwave or in a saucepan over low heat.
Stir in the vanilla, cinnamon, and salt.
Mix in the oats, coconut, almonds, pecans, and walnuts.
Spread evenly on the baking sheet.
Bake for 20-30 minutes, stirring halfway through.
Allow to cool completely and store in an airtight container at room temperature.
Serve with milk or greek yogurt, any fruit of your choice, and a drizzle of honey.
