Banoffee Cake
Just when you thought banana cake couldn’t get any better… banana cake, salted caramel, and cream cheese frosting!
Ingredients
Cake:
190g butter
1 1/4 cup sugar
vanilla
3 eggs
1 1/4 cup mashed bananas (around 3)
2 1/4 cup flour
1 tbsp baking powder
1/2 tsp baking soda
1/3 cup milk
Cream:
1/2 cup sugar
1/2 cup cream
200g cream cheese
vanilla
Salted Caramel:
1/2 cup sugar
3 tbsp butter
1/2 cup cream
1/2 tsp salt
To assemble: 1 banana, sliced
Method
Cake:
Preheat the oven to 180°C. Grease a bundt pan.
In a stand mixer, beat the butter, sugar, and vanilla until light and fluffy.
Add the eggs and mashed bananas, then the dry ingredients and milk.
Pour the cake mixture into the pan. Bake the cake for about 45 minutes. Allow to cool completely.
Cream:
In a stand mixer, add all the ingredients until thick and smooth.
Salted Caramel:
In a pan, heat the sugar on medium heat until melted and caramelized.
Once melted, stir in the butter. Next, pour in the cream and salt.
Stir until everything is combined.
Assembly:
Cut the cooled cake into 3 layers.
Pour caramel on the first layer, using a piping bag or spoon distribute half of the cream, then lay half of the sliced banana.
Repeat this step for the second cake layer. Finally, add the third cake layer on top. Decorate the top with the caramel.
