Date Granola Bars
Ingredients
1 1/4 cup oats
3/4 cup chopped nuts
1/4 cup honey
25 g butter
1 tbsp brown sugar
vanilla
pinch of salt
1/8 tsp cinnamon
15-20 dates, pitted and halved
Method
Preheat the oven to 180°C/350°F.
Line a 12 in loaf pan with baking paper.
Add the oats and nuts on a baking sheet and bake for 10 minutes until golden.
In a saucepan, add the butter, brown sugar, honey, salt, cinnamon, and vanilla.
Cook until the sugar has dissolved.
In a bowl, mix the toasted oats and nuts with the honey mixture.
Place the mixture into the prepared pan and press firmly.
Bake for 10 minutes.
Remove from the oven and add the dates on top pressing firmly.
Refrigerate for an hour.
Slice and enjoy! Store at room temperature.
