Creme Brulee Cheesecake

One of my favorite combinations, it’s a showstopper and a crowd pleaser!

Ingredients

  • Filling:

    500 g cream cheese

    1/4 cup sugar

    2 eggs

    vanilla

    1/3 cup whipping cream

    200 g white chocolate

  • Crust:

    300 g ground digestives

    90 g butter, melted

    2 tbsp sugar

  • sugar for caramelizing


Method

Crust

  • Preheat oven to 170°C. Line a 9” square pan with baking paper.

  • In a bowl, combine all ingredients. Press into the pan. Chill.

Filling

  • In a bowl, add the white chocolate and cream. Microwave until melted.

  • In a food processor, add the cream cheese and sugar.

  • Add the eggs and vanilla. Add the white chocolate and process.

  • Don't over mix. Pour the mixture on the crust.

Bake

  • Bake in a ban-marie for about 40 to 50 minutes.

  • Allow to cool completely before refrigerating for at least 6 hours.

  • Cut into squares. Spread about 1 tsp of sugar on each slice and caramelize the sugar using a blow torch.
