Creme Brulee
An easy-to-make dessert with a creamy and smooth filling, topped with a crisp exterior.
Ingredients
1 liter whipping cream
vanilla
1/2 cup sugar
6 egg yolks
sugar for caramelizing
Method
Preheat the oven to 325°F/170°C.
Place the cream and vanilla in a saucepan and bring it to a boil.
Meanwhile, whisk together the sugar and the egg yolks until combined.
Add the cream a little at a time, stirring continuously.
Sift. Pour the liquid into ramekins.
Bake in a ban-marie just until set, approximately 1 hour.
Refrigerate for at least 2 hours and up to 3 days.
To serve: add a tbsp of sugar per ramekin and spread on top. Using a torch, melt the sugar to form a crispy top. Allow to set for 5 minutes.
