Cherry Cobbler

Made with fresh cherries, so grab a helping hand or two and start pitting the cherries.


Ingredients

  • Filling:

    1 kg cherries

    1/2 cup sugar

    2 tbsp corn flour

    2 tbsp lemon juice

    Pinch of salt

  • 100g butter, melted

  • Batter:

    1 cup flour

    1 cup sugar

    vanilla

    1 tbsp baking powder

    1 egg

    3/4 cup milk


Method

  • Preheat oven to 350°F/180°C.

Filling

  • Wash and pit the cherries. Slice them in half and add to a saucepan with the rest of the filling ingredients.

  • Cook over medium heat for about 5 minutes, until thickened.

Batter

  • In a bowl, mix all ingredients until smooth.

Assembly

  • Add the melted butter in a 10 in pan. Pour the prepared batter over.

  • Spoon the cherry mixture in an even layer over the batter.

  • Bake for 40 to 45 minutes. Serve with icecream.
