Baklava Cake


Ingredients

  • 200 g butter

  • 3/4 cup sugar

  • vanilla

  • 2 eggs

  • 1/4 cup yogurt

  • 2 1/4 cup flour

  • 2 tsp baking powder

  • 1 cup pistachios, chopped

Syrup

  • 1 cup sugar

  • 1 cup water

  • 1/2 tbsp orange blossom water


Method

  • Combine the syrup ingredients and boil. Allow to cool.

  • Preheat the oven to 180°C/350°F. Butter and line a 9 in square pan.

  • Place the chopped pistachios in the bottom of the pan.

  • Cream the butter and sugar until pale.

  • Add the eggs and vanilla.

  • Add 1/3 cup of the prepared syrup mixture and the yogurt.

  • Fold in the flour and baking powder until combined.

  • Pour the batter in the prepared pan and bake for 35-40 min.

  • Allow the cake to cool for 10 min before flipping onto the serving plate.

  • Pour the remainder of the syrup on the cake.
