Baklava Cake
Ingredients
200 g butter
3/4 cup sugar
vanilla
2 eggs
1/4 cup yogurt
2 1/4 cup flour
2 tsp baking powder
1 cup pistachios, chopped
Syrup
1 cup sugar
1 cup water
1/2 tbsp orange blossom water
Method
Combine the syrup ingredients and boil. Allow to cool.
Preheat the oven to 180°C/350°F. Butter and line a 9 in square pan.
Place the chopped pistachios in the bottom of the pan.
Cream the butter and sugar until pale.
Add the eggs and vanilla.
Add 1/3 cup of the prepared syrup mixture and the yogurt.
Fold in the flour and baking powder until combined.
Pour the batter in the prepared pan and bake for 35-40 min.
Allow the cake to cool for 10 min before flipping onto the serving plate.
Pour the remainder of the syrup on the cake.
