Pumpkin Pecan Pie


Ingredients

Dough

  • 1 ¼ cup flour

  • 100 g butter, cold

  • pinch of salt

  • 3 tbsp water, cold

Pumpkin Filling

  • 400 g pumpkin puree

  • 1/2 cup condensed milk

  • 1/3 cup brown sugar

  • 2 eggs

  • 1 tsp cinnamon

  • vanilla

  • pinch of salt

Pecan Filling

  • 1 1/2 cup pecans

  • 75 g butter, melted

  • 1/3 cup brown sugar


Method

Dough:

  • Combine all ingredients in the food processor or by hand. Don't over mix.

  • Roll the dough. Press lightly in a 10 in pan and trim. Refrigerate for at least an hour.

  • Preheat the oven to 180°C.

Pumpkin Filling:

  • In a bowl, whisk all of the ingredients.

Pecan Filling:

  • In a bowl, combine the butter and sugar.

  • Fold in the pecans.

Prep:

  • Place the pecan filling on the dough, then slowly pour the pumpkin filling.

  • Bake for 50-55 mins. Allow it to cool. Serve with icecream.
