Pumpkin Pecan Pie
Ingredients
Dough
1 ¼ cup flour
100 g butter, cold
pinch of salt
3 tbsp water, cold
Pumpkin Filling
400 g pumpkin puree
1/2 cup condensed milk
1/3 cup brown sugar
2 eggs
1 tsp cinnamon
vanilla
pinch of salt
Pecan Filling
1 1/2 cup pecans
75 g butter, melted
1/3 cup brown sugar
Method
Dough:
Combine all ingredients in the food processor or by hand. Don't over mix.
Roll the dough. Press lightly in a 10 in pan and trim. Refrigerate for at least an hour.
Preheat the oven to 180°C.
Pumpkin Filling:
In a bowl, whisk all of the ingredients.
Pecan Filling:
In a bowl, combine the butter and sugar.
Fold in the pecans.
Prep:
Place the pecan filling on the dough, then slowly pour the pumpkin filling.
Bake for 50-55 mins. Allow it to cool. Serve with icecream.
