A lot of garlic and a lot of flavor!


Ingredients

  • 1 part of the pasta recpie

  • 1/3 cup olive oil

  • 1/2 cup garlic cloves (12 cloves)

  • 1 (400 g) can chopped tomatoes

  • 1/4 teaspoon fennel seeds, chopped

  • 1/2 teaspoon red pepper flakes

  • salt

  • black pepper

  • 1/8 cup fresh basil leaves

  • parmesan cheese, for serving


Method

  • In a medium pot, heat the olive oil over medium heat. Add the garlic and cook for 10-12 minutes, tossing occasionally.

  • Place the tomatoes and garlic in a food processor and pulse.

  • Pour the tomato mixture into the pot, add the fennel, red pepper flakes, salt, and black pepper.

  • Lower the heat, and simmer for 20 minutes.

  • Stir in the basil.

  • Meanwhile, bring a pot of water to a boil. Add 1 tablespoon of salt. Cook the fresh pasta for around 3 minutes, however normal pasta takes around 7 minutes.

  • Don’t over cook the pasta, move it out of the boiling water and add it to the sauce, along with 1/4 cup of the pasta water.

  • Simmer for 2-3 minutes. Serve with grated parmesan cheese.
