Arrabbiata
A lot of garlic and a lot of flavor!
Ingredients
1 part of the pasta recpie
1/3 cup olive oil
1/2 cup garlic cloves (12 cloves)
1 (400 g) can chopped tomatoes
1/4 teaspoon fennel seeds, chopped
1/2 teaspoon red pepper flakes
salt
black pepper
1/8 cup fresh basil leaves
parmesan cheese, for serving
Method
In a medium pot, heat the olive oil over medium heat. Add the garlic and cook for 10-12 minutes, tossing occasionally.
Place the tomatoes and garlic in a food processor and pulse.
Pour the tomato mixture into the pot, add the fennel, red pepper flakes, salt, and black pepper.
Lower the heat, and simmer for 20 minutes.
Stir in the basil.
Meanwhile, bring a pot of water to a boil. Add 1 tablespoon of salt. Cook the fresh pasta for around 3 minutes, however normal pasta takes around 7 minutes.
Don’t over cook the pasta, move it out of the boiling water and add it to the sauce, along with 1/4 cup of the pasta water.
Simmer for 2-3 minutes. Serve with grated parmesan cheese.
