Almond Bostock


Ingredients

Honey Syrup

  • 2 tbsp honey

  • 2 tbsp water

Almond Paste

  • 50 g butter, softened

  • 1/4 cup sugar

  • 1 egg

  • 1/2 cup almond flour

  • vanilla

  • pinch of salt

Assembly

  • 5-6 slices brioche or toast

  • 1/4 cup sliced almonds


Method

  • Preheat oven to 200°C/400°F. Line a baking sheet with baking paper.

  • In a saucepan, boil the honey and water. Set aside.

  • Cream the butter and sugar until light and fluffy.

  • Add the egg.

  • Mix in the almond flour, vanilla, and salt.

  • Lay the bread on the baking sheet. Brush with the honey syrup.

  • Top each slice of brioche with almond paste. Top with almond slices.

  • Bake for 10-15 minutes until golden.
