Almond Bostock
Ingredients
Honey Syrup
2 tbsp honey
2 tbsp water
Almond Paste
50 g butter, softened
1/4 cup sugar
1 egg
1/2 cup almond flour
vanilla
pinch of salt
Assembly
5-6 slices brioche or toast
1/4 cup sliced almonds
Method
Preheat oven to 200°C/400°F. Line a baking sheet with baking paper.
In a saucepan, boil the honey and water. Set aside.
Cream the butter and sugar until light and fluffy.
Add the egg.
Mix in the almond flour, vanilla, and salt.
Lay the bread on the baking sheet. Brush with the honey syrup.
Top each slice of brioche with almond paste. Top with almond slices.
Bake for 10-15 minutes until golden.
