Peach Raspberry Cobbler


Ingredients

  • 1 kg peaches

  • 200 g raspberries

  • 1/2 cup sugar

  • vanilla

  • 2 tbsp cornflour

  • 1 tbsp flour

  • pinch of cinnamon

Crumble

  • 100 g butter

  • 1 cup flour

  • 1/4 cup brown sugar

  • 1/4 teaspoon salt

  • 1/4 cup sliced almonds

  • 1/2 cup oats


Method

  • Preheat oven to 180°C/350°F.

  • In a bowl, mix the peaches, raspberries, sugar, vanilla, cornflour, flour, and cinnamon.

  • Add the mixture to a 10 in deep pan.

  • In a bowl, rub the butter, flour, sugar, and salt until crumbly.

  • Fold in the oats and almonds.

  • Evenly spread the crumble on the peaches.

  • Bake for 40-50 minutes. Serve with ice cream.
