Strawberry Tart
A bright and refreshing tart.
Ingredients
Crust
1 1/4 cup flour
pinch of salt
80 g butter
1/3 cup sugar
1 tsp cold water
2 egg yolks
vanilla
Filling
250 g cream cheese
1/2 cup sugar
1 tbsp cream
juice and zest of 1/2 an orange
vanilla
Topping
300 g strawberries
1 tbsp berry jam
1 tbsp orange juice
Method
Crust
In a food processor, blitz the flour, salt and butter.
Add the yolks, sugar, water, and vanilla. Blitz until the mixture starts to clump together.
Turn onto a sheet of cling film and shape into a ball. Wrap and refrigerate for 15 min.
Roll the dough and press on a 23 cm loose-based tart pan. Prick the base with a fork. Freeze for 30 min.
Bake in a preheated oven at 190°C for 30—40 min. Allow to cool.
Filling
Combine all ingredients and whisk until the sugar granules have dissolved.
Topping
In a microwave safe bowl, combine the jam and orange juice.
Microwave until smooth.
Assembly
Spoon the filling into the prepared crust.
Chop the strawberries and lay them on top.
Spoon or brush the topping over the strawberries. Chill before serving.
