Strawberry Cheesecake
Ingredients
Crust
200 g digestive biscuit
50 g butter, melted
400-500g strawberries
Cheesecake
3/4 cup milk
3 egg yolks
1/3 cup sugar
2 tsp gelatine powder
200 g cream cheese
1 cup whipping cream
vanilla
Method
Crust
In a food processor, add the digestives and butter. Press into a springform pan.
Cut the strawberries in half. Place them on the sides of the tin and the bottom of the pan on top of the crust. Chill.
Cheesecake
Combine the milk and vanilla into a saucepan and heat it up just before it simmers.
Whisk the egg yolk and sugar, then pour some of the hot milk mixture into the egg and whisk to combine.
Pour the egg mixture back into the saucepan and cook over medium heat while continuously stirring with a spatula until thick.
Add the gelatin and combine. Strain the mixture.
In a bowl, whip the whipping cream. Add the cream cheese and custard.
Pour the mixture on top of the strawberries and crust.
Chill it in the fridge for at least 4 hours.
Decorate it with whipped cream and strawberries.
