Saffron Cookies
Cookies that feature saffron, pistachios, and white chocolate.
Ingredients
1/2 tbsp milk, warm
saffron
200g butter
300g caster sugar
vanilla
1 large egg
325g self-raising flour
200g white chocolate
100g chopped pistachios
Method
Preheat the oven to 200°C / 390°F.
Combine the warm milk and saffron. Set aside.
Place butter, sugar, and vanilla in a mixing bowl and beat until smooth.
Add the egg to the mixture. Add the flour.
Fold in the chopped white chocolate and pistachios and saffron mixture.
Using an ice cream scooper, scoop the dough on a baking tray lined with baking paper.
Bake for 10 - 12 minutes.
