Saffron Cookies

Cookies that feature saffron, pistachios, and white chocolate.


Ingredients

  • 1/2 tbsp milk, warm

  • saffron

  • 200g butter

  • 300g caster sugar

  • vanilla

  • 1 large egg

  • 325g self-raising flour

  • 200g white chocolate

  • 100g chopped pistachios


Method

  • Preheat the oven to 200°C / 390°F.

  • Combine the warm milk and saffron. Set aside.

  • Place butter, sugar, and vanilla in a mixing bowl and beat until smooth.

  • Add the egg to the mixture. Add the flour.

  • Fold in the chopped white chocolate and pistachios and saffron mixture.

  • Using an ice cream scooper, scoop the dough on a baking tray lined with baking paper.

  • Bake for 10 - 12 minutes.
