Mango Tiramisu
A refreshing summer delight!
Ingredients
1 cup whipping cream
1/3 cup sugar
250 g cream cheese
250 g mascarpone
1 1/2 cup mango juice, divided
vanilla
200 g lady fingers
1 mango, cubed
Method
Using a stand mixer with a whisk attachment, beat the cream and sugar on high speed until it doubles in size.
Add the mascarpone cheese, cream cheese, vanilla, and 1/4 cup mango juice.
Pour 1 cup mango juice, dip the lady fingers, and spread it in a 25cm square pyrex. Add half of the cubed mangoes and cream, a second layer of the lady fingers dipped in mango juice, then the rest of the cubed mangoes and cream. Top with 1/4 cup mango juice.
Chill in the refrigerator 4 hours or overnight.
