Mango Tiramisu

A refreshing summer delight!


Ingredients

  • 1 cup whipping cream

  • 1/3 cup sugar

  • 250 g cream cheese

  • 250 g mascarpone

  • 1 1/2 cup mango juice, divided

  • vanilla

  • 200 g lady fingers

  • 1 mango, cubed


Method 

  • Using a stand mixer with a whisk attachment, beat the cream and sugar on high speed until it doubles in size.

  • Add the mascarpone cheese, cream cheese, vanilla, and 1/4 cup mango juice.

  • Pour 1 cup mango juice, dip the lady fingers, and spread it in a 25cm square pyrex. Add half of the cubed mangoes and cream, a second layer of the lady fingers dipped in mango juice, then the rest of the cubed mangoes and cream. Top with 1/4 cup mango juice.

  • Chill in the refrigerator 4 hours or overnight.
