Saffron Buns
Soft, sweet buns infused with aromatic saffron, filled with a buttery sugar mixture, and finished with a glossy syrup and sugar coating.
Ingredients
For 14 buns
Dough
450 g flour
75 g sugar
1 egg
saffron
10 g yeast
1/2 tsp salt
250 g milk, warm
75 g butter
Filling
75 g butter
50 g sugar
pinch of salt
Topping
2 tbsp sugar
1 tbsp water
sugar, to top
Method
Mix flour, sugar, egg, saffron, yeast, and salt in a bowl.
Add warm milk and combine until smooth.
Knead in butter until the dough is smooth. Check if it’s ready by performing the windowpane test—stretch a small piece of dough, and if it becomes thin enough for light to pass through without tearing, it's done.
Cover and let the dough proof for 1 hour.
Prepare the filling by mixing butter, sugar, and salt.
Roll out the dough, spread the filling evenly, and fold it into thirds.
Cut into 14 strips.
Gently stretch each strip, then twist it around two fingers and tuck the end in between to secure — feel free to shape the buns however you like.
Proof for another 30-40 minutes.
Preheat the oven to 190°C and bake for 15 minutes.
Make the syrup by boiling sugar and water until the sugar dissolves.
Once the buns come out of the oven, brush them with syrup and dip in sugar.
