Almond Cookies (Acıbadem Kurabiyesi)

A traditional Turkish cookie that is soft and chewy, with a slightly crisp edge.


Ingredients

Yield: Makes 15-20 cookies (depending on the piped size)

  • 50 g egg whites (around 2 eggs)

  • 100g sugar

  • pinch of salt

  • 1/2 tsp lemon juice

  • 90g ground almonds

  • 15-20 unsalted almonds


Method

  • Preheat the oven to 150°C/300°F.

  • In a ban marie oven low heat, whisk the egg whites, sugar, salt and lemon juice until the sugar has dissolved.

  • Remove from the heat and mix in the ground almonds.

  • Allow to cool completely.

  • Fill a piping bag with the mixture.

  • Pipe small circles on a baking sheet lined with baking paper.

  • Press an almond on each circle.

  • Bake 20-25 minutes.
