Pineapple Upside Down Cake
A classic soft cake with caramelized pineapple slices on top.
Ingredients
50 g butter, melted
1/3 cup brown sugar
6-7 canned pineapple slices
Cake
50 g butter
1/2 cup sugar
vanilla
1 egg
1 cup flour
1/2 tbsp baking powder
1/4 cup water
2 tbsp pineapple syrup
Method
Preheat the oven to 350°F/180°C. Butter and line a springform pan with baking paper.
Mix the brown sugar and butter and pour over the prepared pan.
Lightly blot the pineapple slices with a paper towel and place them on the bottom of the springform pan. Set aside.
Cream the butter and sugar. Add the egg and vanilla.
Mix in the dry ingredients, water, and pineapple syrup until combined.
Pour the dough on top of the pineapple slices.
Bake for 25-30 minutes. Allow to cool for 15-20 minutes before flipping and serving.
