Pineapple Upside Down Cake

A classic soft cake with caramelized pineapple slices on top.


Ingredients

  • 50 g butter, melted

  • 1/3 cup brown sugar

  • 6-7 canned pineapple slices

Cake

  • 50 g butter

  • 1/2 cup sugar

  • vanilla

  • 1 egg

  • 1 cup flour

  • 1/2 tbsp baking powder

  • 1/4 cup water

  • 2 tbsp pineapple syrup


Method 

  • Preheat the oven to 350°F/180°C. Butter and line a springform pan with baking paper.

  • Mix the brown sugar and butter and pour over the prepared pan.

  • Lightly blot the pineapple slices with a paper towel and place them on the bottom of the springform pan. Set aside.

  • Cream the butter and sugar. Add the egg and vanilla.

  • Mix in the dry ingredients, water, and pineapple syrup until combined.

  • Pour the dough on top of the pineapple slices.

  • Bake for 25-30 minutes. Allow to cool for 15-20 minutes before flipping and serving.
