Olympics Chocolate Muffins
Rich, chocolatey muffins with chunks of folded chocolate and an oozing creamy ganache.
Ingredients
Yield: Makes 6 muffins
3/4 cup flour
1/2 cup sugar
1/3 cup cocoa powder
1/2 tsp baking soda
1/2 tsp baking powder
pinch of salt
1 egg
vanilla
1/3 cup yogurt
1/4 cup oil
1/4 cup milk
50 g dark chocolate, chopped
50 g milk chocolate, chopped
Ganache
100 g milk chocolate, chopped
1/4 cup cream
20 g butter
Method
Preheat the oven to 180°C/350°F. Line a muffin tin with baking paper or muffin liners.
Ganache
Place the chocolate in a bowl.
Heat the butter and cream in a saucepan or in the microwave. Pour it over the chocolate.
Stir until combined and refrigerate.
Muffins
In a mixing bowl, combine the flour, sugar, cocoa power, baking soda, baking powder, salt, egg, vanilla, yogurt, oil, and milk.
Fold in the chopped chocoalte.
Scoop the batter into the lined tin using an ice cream scooper.
Bake for 20-25 minutes.
Cool the muffins for 30 minutes (they should remain slightly warm).
Pipe the chilled ganache into the center of the warm muffins using a piping bag. The warmth of the muffins will create an oozing, melted ganache center.
