Olympics Chocolate Muffins

Rich, chocolatey muffins with chunks of folded chocolate and an oozing creamy ganache.


Ingredients

Yield: Makes 6 muffins

  • 3/4 cup flour

  • 1/2 cup sugar

  • 1/3 cup cocoa powder

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • pinch of salt

  • 1 egg

  • vanilla

  • 1/3 cup yogurt

  • 1/4 cup oil

  • 1/4 cup milk

  • 50 g dark chocolate, chopped

  • 50 g milk chocolate, chopped

Ganache

  • 100 g milk chocolate, chopped

  • 1/4 cup cream

  • 20 g butter


Method

  • Preheat the oven to 180°C/350°F. Line a muffin tin with baking paper or muffin liners.

Ganache

  • Place the chocolate in a bowl.

  • Heat the butter and cream in a saucepan or in the microwave. Pour it over the chocolate.

  • Stir until combined and refrigerate.

Muffins

  • In a mixing bowl, combine the flour, sugar, cocoa power, baking soda, baking powder, salt, egg, vanilla, yogurt, oil, and milk.

  • Fold in the chopped chocoalte.

  • Scoop the batter into the lined tin using an ice cream scooper.

  • Bake for 20-25 minutes.

  • Cool the muffins for 30 minutes (they should remain slightly warm).

  • Pipe the chilled ganache into the center of the warm muffins using a piping bag. The warmth of the muffins will create an oozing, melted ganache center.
