Mocha Cake

Chocolate and coffee cake with a luscious frosting.


Ingredients

  • Cake:

    200g butter

    1 1/2 cup sugar

    vanilla

    3 eggs

    2/3 cup hot water

    2/3 cup cocoa

    1 tsp coffee

    2/3 cup milk

    1 3/4 cup flour

    1 tsp baking soda

    Pinch of salt

  • Frosting:

    250g bittersweet chocolate

    100g milk chocolate

    1 tbsp sugar

    50 g butter

    1 tsp coffee

    1 1/4 cup cream

    vanilla


Method

Cake

  • Preheat the oven to 180°C. Grease a 8*12 pan.

  • Sift the flour, salt, and baking soda. Set aside.

  • In a stand mixer, beat the butter and sugar until light and fluffy.

  • Add the vanilla, then gradually add the eggs one at a time.

  • In another bowl combine the cocoa powder, coffee, water, and milk. Set aside.

  • Add the dry and wet mixture to the stand mixer alternating and starting and ending with the dry mixture.

  • Pour the mixture into the prepared tray and bake for 30-45 min.

Frosting

  • Heat the cream in the microwave.

  • Place the rest of the ingredients in a bowl.

  • Pour the hot cream on the ingredients and gently stir.

  • Refrigerate the mixture for 1 hour.

  • Then whisk until light and fluffy.

  • Spoon the frosting generously on the cooled cake and spread it.
