Lemon Blueberry Cake
Bright lemon cake with bursts of blueberries and topped with glaze.
Ingredients
Cake:
3 eggs
1 cup sugar
1 tsp vanilla
Lemon zest
1/2 cup lemon juice
1/2 cup oil
3/4 cup sour cream or yogurt
2 cups flour
2 tsp baking powder
1 tsp baking soda
pinch of salt
1 cup blueberry
Glaze:
1/2 cup powdered sugar
juice of 1/2 a lemon
2 tbsp milk
250g cream cheese
1/2 cup whipping cream
Method
Mix the eggs, sugar, vanilla, lemon zest for 4 minutes until fluffy.
Add the lemon juice, oil, sour cream.
Sift the flour, baking powder, baking soda, salt then add them gradually.
In a bowl, mix the blueberries and some flour.
Put half of the cake mixture in a greased pan, then randomly distribute the blueberry, then add the rest of the mixture.
Bake at a preheated oven at 350°F/180°C for 30-45 minutes.
In a bowl, mix all the glaze ingredients.
Garnish with the sauce, blueberries, and dried lemon.
