Lemon Blueberry Cake

Bright lemon cake with bursts of blueberries and topped with glaze.

Ingredients

Cake:

  • 3 eggs

  • 1 cup sugar

  • 1 tsp vanilla

  • Lemon zest

  • 1/2 cup lemon juice

  • 1/2 cup oil

  • 3/4 cup sour cream or yogurt

  • 2 cups flour

  • 2 tsp baking powder

  • 1 tsp baking soda

  • pinch of salt

  • 1 cup blueberry

Glaze:

  • 1/2 cup powdered sugar

  • juice of 1/2 a lemon

  • 2 tbsp milk

  • 250g cream cheese

  • 1/2 cup whipping cream


Method

  • Mix the eggs, sugar, vanilla, lemon zest for 4 minutes until fluffy.

  • Add the lemon juice, oil, sour cream.

  • Sift the flour, baking powder, baking soda, salt then add them gradually.

  • In a bowl, mix the blueberries and some flour.

  • Put half of the cake mixture in a greased pan, then randomly distribute the blueberry, then add the rest of the mixture.

  • Bake at a preheated oven at 350°F/180°C for 30-45 minutes.

  • In a bowl, mix all the glaze ingredients.

  • Garnish with the sauce, blueberries, and dried lemon.
