Hazelnut Molten Cake

A decadent hazelnut molten cake with a rich, gooey center, served warm for an indulgent treat.


Ingredients

  • 200g butter

  • 80 g milk chocolate

  • 120 g dark chocolate

  • 5 eggs, separated

  • 200 g sugar

  • 100 g ground hazelnuts

  • 30 g cocoa powder

  • vanilla

  • pinch of salt


Method

  • Preheat the oven to 180°C/350°F. Line a 9” springform pan with baking paper.

  • In a microwavable bowl or saucepan, melt the butter and chocolate.

  • Mix in the cocoa powder and egg yolks. Set aside.

  • In a bowl, whisk the egg whites, sugar, vanilla, and salt until stiff peaks form.

  • Fold the egg whites into the chocolate mixture until combined.

  • Add 2/3 of the batter into a separate bowl and fold in the ground hazelnuts.

  • Pour the cake batter with hazelnuts into the pan. Bake for 20-25 minutes.

  • Allow to cool for 30 minutes.

  • Pour the remaining 1/3 of the cake batter on top. Bake for 10-15 minutes or until a film forms on top.
