Soguk Kadayıf (Cold Kunafa)


Ingredients

  • 2/3 cup water

  • 2/3 cup sugar

  • 3 cardamom pods

  • 1 cinnamon stick

  • 2 1/2 cups milk

  • 1 cup cream

  • vanilla

  • 70 g ghee

  • 200 g kunafa dough

  • 1/2 cup pistachios, ground


Method

  • Preheat the oven to 180˚C/350˚F.

  • In a pot, boil the sugar, water, cinnamon, and cardamom until the sugar dissolves.

  • Add in the cream and milk and boil for a minute.

  • Add the vanilla and refrigerate.

  • In a 8 in square pan, add the kunafa dough and break it into smaller pieces.

  • Add the clarified butter and rub until the kunafa dough absorbs it.

  • Remove half of the dough and set aside.

  • Press half of the dough on the bottom of the pan. Add the pistachios followed by the other half of the kunafa. Press on the dough until it flattens.

  • Bake for 25-30 minutes until golden brown.

  • Pour the refrigerated milk soak. Cover and refrigerate for 4 hours.

  • Top with pistachios.
