Soguk Kadayıf (Cold Kunafa)
Ingredients
2/3 cup water
2/3 cup sugar
3 cardamom pods
1 cinnamon stick
2 1/2 cups milk
1 cup cream
vanilla
70 g ghee
200 g kunafa dough
1/2 cup pistachios, ground
Method
Preheat the oven to 180˚C/350˚F.
In a pot, boil the sugar, water, cinnamon, and cardamom until the sugar dissolves.
Add in the cream and milk and boil for a minute.
Add the vanilla and refrigerate.
In a 8 in square pan, add the kunafa dough and break it into smaller pieces.
Add the clarified butter and rub until the kunafa dough absorbs it.
Remove half of the dough and set aside.
Press half of the dough on the bottom of the pan. Add the pistachios followed by the other half of the kunafa. Press on the dough until it flattens.
Bake for 25-30 minutes until golden brown.
Pour the refrigerated milk soak. Cover and refrigerate for 4 hours.
Top with pistachios.
