Berry Tart
Ingredients
Crust
100g butter
3 tbsp sugar
1 cup flour
1 tbsp water
pinch of salt
Filling
100 g berries, blended
1/4 cup sugar
1 cup whipping cream
250g mascarpone
vanilla
1 banana, sliced
3 tbsp Nutella
Method
In a food processor, add the butter, sugar, flour, water, and salt.
Roll the dough. Press lightly in a 9 in tart pan and trim. Using a fork prick the base.
Refrigerate for one hour.
Preheat the oven to 180°C / 350°F.
Bake for 25-30 minutes.
Add the Nutella in the base of the tart. Lay the sliced banana on top.
In a mixing bowl, whisk the whipping cream and sugar.
Add the mascarpone, berries, and vanilla.
Spread the filling on top of the bananas.
Best enjoyed on the same day.
