Salted Biscuit Tart
Ingredients
Crust
200g salted biscuits
70g butter, melted
1 tbsp sugar
Filling
100g butter
1/2 cup whipping cream
3/4 cup brown sugar
3 eggs
vanilla
1/2 cup walnuts, chopped
1/3 cup chocolate chips
20-25 salted biscuits
Method
Preheat the oven to 180°C / 350°F.
In a food processor, grind the salted biscuits. Add the sugar and butter.
Press the crust into a pyrex.
Add the chopped walnuts and chocolate chips on top.
Arrange the biscuits on top. Set aside.
In a saucepan, melt the butter, brown sugar, and whipping cream.
Remove from the heat and allow to cool for 5 minutes.
Whisk in the eggs and vanilla.
Strain the mixture.
Pour over the biscuits on the pyrex.
Bake for 25-30 minutes.
Serve warm with ice cream.
