Apple Shortbread
Ingredients
Filling
5 apples
3 tbsp sugar
1/2 tsp cinnamon
1/4 cup chopped walnuts
Dough
200 g butter
100 g oil
100 g powdered sugar
1 egg
vanilla
500 g flour
1/2 cup chopped walnuts
Method
Preheat the oven to 180°C/350°F. Line a baking sheet with baking paper.
Peel the apples and grate them.
Add into a saucepan with the sugar and cinnamon.
Cook until the water has evaporated.
Mix in the walnuts. Set aside to cool.
In a food processor, add the butter, oil, powdered sugar, egg, vanilla, and flour.
Roll onto a flat surface and cut 2.5” circles using a cutter.
Add a teaspoon of the filling to half of the circle and fold it.
Press the walnuts on top of the dough.
Bake for 20-25 minutes or until golden.
Dust with powdered sugar.
