Apple Shortbread


Ingredients

Filling

  • 5 apples

  • 3 tbsp sugar

  • 1/2 tsp cinnamon

  • 1/4 cup chopped walnuts

Dough

  • 200 g butter

  • 100 g oil

  • 100 g powdered sugar

  • 1 egg

  • vanilla

  • 500 g flour

  • 1/2 cup chopped walnuts


Method

  • Preheat the oven to 180°C/350°F. Line a baking sheet with baking paper.

  • Peel the apples and grate them.

  • Add into a saucepan with the sugar and cinnamon.

  • Cook until the water has evaporated.

  • Mix in the walnuts. Set aside to cool.

  • In a food processor, add the butter, oil, powdered sugar, egg, vanilla, and flour.

  • Roll onto a flat surface and cut 2.5” circles using a cutter.

  • Add a teaspoon of the filling to half of the circle and fold it.

  • Press the walnuts on top of the dough.

  • Bake for 20-25 minutes or until golden.

  • Dust with powdered sugar.
