Banana Pudding
I tried Magnolia's Banana Pudding for the first time last week. While searching for recipes I found out that they've shared theirs! I tried it and it just wasn't the same. So here's another one that tastes just as good as theirs!
Ingredients
1/3 cup sugar
1/4 cup corn starch
3 egg yolks
pinch of salt
2 cups milk
50g butter
vanilla
1 cup whipping cream
2-3 bananas, sliced
Nilla Wafers
Method
Prepare the pastry cream by heating milk in a saucepan.
Meanwhile, whisk the egg yolks, salt, sugar, cornstarch, and vanilla.
Add some of the hot milk to the egg mixture and whisk.
Return the mixture back to the pan and boil until thickened.
Add the butter and whisk.
Remove from the heat, strain, and cover with plastic wrap. Refrigerate.
Whisk the whipping cream until stiff peaks form, then add the cooled pastry cream mixture.
In a deep pan (I used a 9*9 pan), layer the wafers, banana, and pudding.
Top with extra wafers and whipped cream (optional). Refrigerate.
I highly recommend making this and allowing it to chill overnight, because the wafers soften and flavors develop.
