Aqaily Madeleines
A delightful fusion dessert that blends the flavors of traditional Arabic cuisine with the classic French madeleine.
Ingredients
100 g butter, melted
2 eggs
1/2 cup sugar
1/4 tsp ground cardamom
saffron
vanilla
3/4 cup flour, sifted
1/2 tsp baking powder
sesame seeds
Method
Melt the butter and set aside to cool down.
In a stand mixer or by hand, whisk the eggs, sugar, vanilla, saffron, and cardamom until pale and thick.
Gently fold in the flour and baking powder, ensuring not to over-mix.
Remove a small portion of the batter and mix it with the cooled melted butter until combined.
Gently fold the butter mixture back into the rest of the batter.
Cover and refrigerate for 30 minutes.
Preheat the oven to 180°C/350°F.
Grease the madeleine pan with oil or melted butter and sprinkle with sesame seeds.
Spoon or pipe the batter gently into the greased madeleine molds, filling each mold about 3/4 of the way. Be careful not to overfill, as the madeleines will rise slightly as they bake.
Bake for 10-12 minutes.
