Aqaily Madeleines

A delightful fusion dessert that blends the flavors of traditional Arabic cuisine with the classic French madeleine.


Ingredients

  • 100 g butter, melted

  • 2 eggs

  • 1/2 cup sugar

  • 1/4 tsp ground cardamom

  • saffron

  • vanilla

  • 3/4 cup flour, sifted

  • 1/2 tsp baking powder

  • sesame seeds


Method

  • Melt the butter and set aside to cool down.

  • In a stand mixer or by hand, whisk the eggs, sugar, vanilla, saffron, and cardamom until pale and thick.

  • Gently fold in the flour and baking powder, ensuring not to over-mix.

  • Remove a small portion of the batter and mix it with the cooled melted butter until combined.

  • Gently fold the butter mixture back into the rest of the batter.

  • Cover and refrigerate for 30 minutes.

  • Preheat the oven to 180°C/350°F.

  • Grease the madeleine pan with oil or melted butter and sprinkle with sesame seeds.

  • Spoon or pipe the batter gently into the greased madeleine molds, filling each mold about 3/4 of the way. Be careful not to overfill, as the madeleines will rise slightly as they bake.

  • Bake for 10-12 minutes.
