Vimto Trifle
Ingredients
Pound Cake, sliced
Soaking Syrup
1 tbsp vimto
2 tbsp water
Pastry Cream
2 cups milk
vanilla
1/3 cup sugar
1/4 cup cornstarch
3 egg yolks
45g butter
Berries - around 400g
Mascarpone Cream
250g mascarpone
1 cup whipping cream
1 can cream
1/3 cup vimto
Method
Pastry cream
In a saucepan, heat the milk and vanilla.
Meanwhile, in a bowl, combine the sugar, cornstarch, and yolks.
As you continue whisking, slowly add some of the hot milk to the yolk mixture. Return the entire mixture to saucepan.
Whisk until the mixture thickens. Add the butter.
Strain the mixture. Lay a sheet of plastic wrap directly over the cream. Refrigerate it.
Mascarpone cream
Whisk whipping cream until it reaches a soft peak.
Add in the mascarpone, vimto, and cream.
Assembly
Mix the vimto and water to make the soak.
Add a layer of the pound cake, soaking syrup, pastry cream, berries, and the mascarpone cream. Continue layering until you fill your trifle bowl.
Refrigerate until ready to serve.
