Vimto Trifle


Ingredients

Pound Cake, sliced

Soaking Syrup

  • 1 tbsp vimto

  • 2 tbsp water

Pastry Cream

  • 2 cups milk

  • vanilla

  • 1/3 cup sugar

  • 1/4 cup cornstarch

  • 3 egg yolks

  • 45g butter

Berries - around 400g

Mascarpone Cream

  • 250g mascarpone

  • 1 cup whipping cream

  • 1 can cream

  • 1/3 cup vimto


Method

Pastry cream

  • In a saucepan, heat the milk and vanilla.

  • Meanwhile, in a bowl, combine the sugar, cornstarch, and yolks.

  • As you continue whisking, slowly add some of the hot milk to the yolk mixture. Return the entire mixture to saucepan.

  • Whisk until the mixture thickens. Add the butter.

  • Strain the mixture. Lay a sheet of plastic wrap directly over the cream. Refrigerate it.

Mascarpone cream

  • Whisk whipping cream until it reaches a soft peak.

  • Add in the mascarpone, vimto, and cream.

Assembly

  • Mix the vimto and water to make the soak.

  • Add a layer of the pound cake, soaking syrup, pastry cream, berries, and the mascarpone cream. Continue layering until you fill your trifle bowl.

  • Refrigerate until ready to serve.
