Tiramisu

A classic Italian dessert, no raw eggs included!

Ingredients

  • 4 tbsp coffee (Nescafe)

  • 1 cup warm water

  • 4 egg yolks

  • 1/3 cup sugar

  • 1 tablespoon of vanilla

  • 1 cup (250g) mascarpone cheese

  • 1 cup whipping cream

  • 200g lady fingers


Method

  • Dissolve the coffee in the water and set aside.

  • On low heat, using a bain-marie, mix the egg yolks and sugar in a bowl constantly until it thickens. Remove the mixture from the heat, add the vanilla and set aside.

  • Using a stand mixer with a whisk attachment, beat the cream on high speed until it doubles in size.

  • Add the mascarpone cheese to the yolk mixture and mix. Add the whipped cream in 3 parts and fold.

  • Dip the lady fingers in the coffee and spread it in a 25cm square pyrex. Add half of the cream, a second layer of the lady fingers dipped in coffee, then the rest of the cream. Dust with cocoa powder.

  • Chill in the refrigerator 4 hours or overnight.
